And onions…lots of onions are good, too.

Cranberries. In tarts. Because.

It’ officially the season for these seasonings.

It was a few years later that I found out what was in a Cobb Salad….

One way to remember the ingredients:

EAT COBB

Eggs + Avocado + Tomato   Chicken + Onion + Bacon + Blue Cheese

I recently had a Cobb Salad that was a variation on the theme. It was made with radicchio  instead of greens, which was a little too warming for a summer salad, but for an autumnal one…..Mmm Mmmm Good!

And it was chopped up nicely. Somewhere in the 21st century we’ve forgotten that salads are eaten with forks in public places and that they’re supposed to be ready to eat and not need more knife work.

This version also had roasted butternut squash and turkey instead of chicken and dried cranberries, a Plymouthy version.  Good, and got me thinking about a few more tweaks. I’d do chopped radicchio as the base, great color, nice change from  KALE (hasn’t the clock ticked past that by now????)

Anyhow – turkey instead of chicken – but a roasted turkey. A roasty flavor would help here. Maybe toss a turkey breast in while roasting the butternut squash.

Now that the nights are cool – last night was downright COLD – a little “toss a sheet pan of something in the oven”  action is NOT out of the question., and if it helps to stave off another night of not turning the heat on…more power to that!

I might use fresh cranberries, once they once they come in, instead of dried. Blue cheese. Hard boiled eggs – easy. Bacon? No hardship there. I also have managed not to start a jar of bacon grease, so get a jar ready….I’m going to go with black olives as the O…..I just don’t like raw onion, and since it doesn’t like me right back, we’re even on that score.

What have a got so far?

Egg + A…….+ Turkey  Cranberry + Olive + Bacon + Blue Cheese

If I make an Apple/Maple dressing, a little chopped apple will temper it, give the sweet to go with the rich/spicy/…apple cider vinegar, chopped apple, maple syrup and a touch of oil….

The temptation to ‘pumpkin spice’ this is nearly overwhelming, but I’ll try to resist.

Berries, cinnamon, ginger, sugar and small raisins between pastry. Bake is implied. Easy.

CRANBERRY – RAISIN PIE

3 C raw cranberries

1 C raisins

1 ¼ C sugar

2 Tbsp. flour

¼ tsp salt

¾ C water

1 ½ tsp vanilla*

Pastry for a 2 crust 9 inch

Put the cranberries and raisins through food grinder.Place in saucepan and add all ingredients except vanilla.Cook over low heat until thick, and cranberries are cooked. Add vanilla and place in pie shell. Bake until crust is done. Dots of butter and nutmeats may be added on

Back to carrots.

So the carrots have been sitting in the fridge bin for about as long as they might and still be carrots and not compost.Time to make something.

I had a recipe note that I’ve been meaning to try. Recipe isn’t quite the right word.It cleans up to this:

Carrot and fresh Cranberry Slaw

Carrots – 4 cups

dried cranberries Fresh cranberries

Apple cider vinegar

oil

Fresh ginger

Shallot

Fennel – ¼ med bulb

I admit, even for me, this isn’t much to go on.I switched out fresh cranberries for the dried because  1) I like them better and 2)I also had some.

I was totally in love with the fresh ginger and the carrots together.

I had a shallot and this seemed like a good place to park it, ditto the dregs of a fennel bulb.

But it needed something more….

Trimmed and peeled the carrots and got out the handy dandy grater that I bought at Woolworth’s when I first moved out of the ancestral abode ever so many decades ago -sooo last century

Grates more then cheese – stale bread for bread crumbs, carrots and cabbages for slaw, the occasional knuckle, ect.

Carrot, gratedAdd the cranberries….a couple of handfuls – I picked through them ( a good berry bounces) and rinsed and dried them first. Or used the dried cranberries.

Chop the shallot.

If you don’t have fennel you might use celery

Chop and add.Mix and mingle together Smelling good.

Cut and peel a thumb sized piece of fresh ginger. Avoiding cutting your thumb.Grate or chop finely and add.

Now for oil and vinegar…..apple cider vinegar is a good choice, and I had a bottle out.

apple cider vinegarAnd then I remembered….I had purchased flavored oil and vinegar from Omega Olive Oil at the Plymouth Farmers Market in the winter, but between the snow and the fire and the relocation I had forgotten….where are they now?

Blood Orange Oil and Ginger Balsamic Vinegar……now this bowl is singing good..

Sometimes it’s the little things that make something go from good to great.  These carrots were tops!
